Welcome to Knystaforsen!
Our restaurant – in an old sawmill, by a rippling river, surrounded by pristine forests – was originally our home. So we treat our guests like family.
Over the course of our hours together, we will regale you with a terroir-driven tasting menu that celebrates the wild nature around us. Some ingredients are plucked from the rivers and lakes, others are foraged in the woods, wild game and artisanal products are sourced from local purveyors.
We cook outdoors, over flames and embers. It’s sensuous and impractical, in the best sense of the word. It’s as much about camaraderie around a campfire as it’s about enjoying a meal seasoned with the visceral thrill of its unhurried preparation; fire, the primordial culinary art, provides sustenance for the soul too.
For those who wish to linger a little longer, we offer a handful of rooms. Wake surrounded by forests, lakes and rivers, and let the experience unfold at its own pace.
Our house is a casual place, there aren’t many rules here, except for one: making sure you feel at home.

A note about booking
We will have our last service at Knystaforsen on the 7th of November 2026. From November 13 we will move our restaurant to Tivoli in Denmark until Christmas.
Visit us at the Japanese Pagoda
From November 13th to December 22nd, 2026, we will take up residence in the Japanese Pagoda at Tivoli Gardens in Copenhagen.
We look forward to welcoming you to an immersive sensory journey shaped by open-fire cooking and inspired by the landscapes that define our cuisine – the lake, the forest, and the river.
Visit us in 2027
Our first opening day of 2027 is January 14th, and we currently are open for bookings until the end of March 2027 here at Knystaforsen. If you want to book for a later date, please sign up for our newsletter to get a link when future bookings open.
Terms & frequently asked questions
– We welcome children from 11 years and older, served the full tasting menu
– We cannot accommodate babies or toddlers in the restaurant or in our rooms
– Dogs are not allowed in the restaurant, but we do have some dog-friendly rooms (a cleaning fee applies when bringing a dog)
– When booking, you will be asked to pay a deposit of 1.000 SEK per guest. The deposit is non-refundable and will be deducted from your bill on the night. The visit can be rescheduled to another date if you let us know at least 5 days in advance.
